APA format psychology citing?

like many psychology books, my texts are basically compilations of other people's thesis, essays, and research, edited by the "author" of the book. Because of this, do I have to cite each article, rather than the whole book?

how do I cite?
Also, when I do in-text citing, do i put the original author and the original date or do i put the new edited date?
